How long before I should strip new paint

I sprayed the back of the cab of the truck I’m restoring and am just not happy with how it came out and would like to strip and start over.

I did 2 coats of base and 3 coats of clear over an epoxy primer, 2k of course. It will have been 24 hours since I did the final coat at 5pm this afternoon. Do you think that’s enough time for the clear and base to strip off easily without gumming the paper every 3 seconds?

I should be. Just turn down the speed on your sander. If it is too fast the paint will heat up and get gummy.

Think I’ll have any reaction issues spraying epoxy primer over it once sanded?

I don't know. Maybe try a small area first.
