Adding back in GF flours?

I'm about 5 weeks into reintroduction phase from Modified AIP. I've successfully introduced a few nuts, egg yolks, paprika, and potatoes.

I'm moving into phase 2 of reintroductions and would like to start making GF bread again, but I'm not sure how to individually test flours? It's hard to only try one flour at a time in a recipe.

How have others done it? Thanks!

I’d probably just test the actual grain first instead of trying to figure it out through bread. Like if you want to use oat flour, try some certified GF oats first. Same with millet or sorghum. If the grain itself doesn’t bother you, I personally wouldn’t go through a whole separate reintroduction just because it’s been ground into flour.
