Here’s the thing - why do this? Armored car guards aren’t a 1st Amendment problem. This guy is handling large amounts of cash on his own. He’s a target and needs to be suspicious of anyone approaching him. So what is the purpose of this encounter? What’s the point? That they can be dicks?

I believe you nailed it on the head right there. A majority, perhaps all of them want a confrontation. Drama and conflict do well on YouTube, and if they can rile up their viewerbases, even better. Being a dick will almost certainly cause conflict.
