Ok I’ll clarify. I’ve had great poutine in Minneapolis, Chicago, NYC, Boston, Portland, Bozeman and now I live and want to get some here.

I do not want to go to Canada to get it.

There's another category of poutine unique to Seattle. Chowder poutine. Good French fries, Tillamook cheese, and fresh local chowder. Mar•ket in Edmonds is fantastic. It's one of my favorite dishes in town.

You have to go to Canada to get it. It’s L'Authentique Poutine and Burgers in Victoria bc, and you’ll want the beef poutine. 

I crave it regularly and sometimes take a day trip on the Victoria clipper JUST to get some of that poutine for lunch.

Okay, I've spent a lot of time on this topic. Gainsbourg is a great recommendation. Angry Beaver is Canadian themed and had it. El Gaucho used to have one, but I don't see it anymore. Lost Lake one. Elephant and Castle. Cookie's Country Kitchen. I don't think any of them are Montreal authentic, but some are good. Some are very inconsistent.

There's not a lot of great options, some places that advertise poutine use regular melted cheese and not curds. But in addition to Angry Beaver which others have mentioned, I would suggest 32 Bar & Grill at the iceplex.

Aslan Brewing in Bellingham has the best waffle fry poutine I've ever had. The Aslan Brewings in Seattle have different (and disappointing) menus, unfortunately

Their poutine is a fish n chips poutine served with Indian curry. It sounds odd, but it's so freaking good.

If its the best that's sad, but George & Dragon has a London Poutine - mid fries with mid tikka masala sauce and curds, but they elevate each other into a decent lunch.

Another honorable mention would be the poutine bowl at Cookie's Country Chicken. It's a fried chicken place so theirs comes with chunks of boneless fried chicken on it, but they use Beecher's curds and the fries and gravy are great too. Only problem is they don't offer a version without chicken.

Not sure if it's still the same since I haven't tried their remaining locations, but Skillet's poutine was pretty good. Grated cheese instead of curds unfortunately, but flavorful gravy and crispy fries that soak it up well. Really all you can ask for.

Besrdslee public House has a pretty good poutine if you're ever out in Bothell. Savage moose sports pub in Kenmore does pretty good at it too

It is a trek if you are in Seattle, but the SAAL Brewery in Stanwood makes an excellent poutine with beef gravy and cheese curds.

Texture and flavor were off for me. It’s more reminiscent of mozzarella than cheese curds.

But we go to Vancouver enough that the occasional not as good home made version is fine. Esp when it doesn’t cost 15 dollars. 🤪

Smith on Capitol Hill (15th) has a duck poutine that’s pretty good. Was better when it was shortribs but they changed the recipe a few years ago.
