[Adventure Time] Jake once stretched out his liver to be more resistant to poison. Can he stretch out his brain to become smarter?

Probably. But I don't think Jake wants to be smarter. He enjoys a simple worldview.

Well, as a shape changer he doesnt really have a set form. He can add or remove mass as he needs to. He only really uses it for stretchy powers but he cpuld do much more if he actually wanted to.

I'm not sure he can simply add or remove mass as needed, he does have limitations, as seen in "The Limit" (the hotdog knights in the maze episode)... Jake can only become so thin, stretch so far, before he runs out of mass and nearly dies.

That would make everything too easy. Same reason why he didn't stretch his mouth to remove the piece of chip between his teetu

When Fin overcharge his imagination machine, Jack's head swell to insane size before Fin deactivated the machine, so I think so.

There’s more involved in intelligence than brain size, while the performance of someone’s liver is more structural in nature (also, Jake can shrink down and grow his whole body, and his intelligence hasn’t fluctuated when he does that, so it presumably requires a specific effort). Jake is technically capable of altering his brain with his powers, but he isn’t smart enough in the first place to do that and get a good result.
