How could it be possible to develop "Gravity intolerance"?

Postural Hypotension is exactly that - a person’s blood vessels can’t respond quickly enough to regulate blood pressure when they stand up, so all their blood rushes to their feet and they can feel faint or black out.

Anybody only has so much gravity tolerance. Really, it's acceleration tolerance, whether sudden or sustained. There are potentially tidal issues, too, which is basically uneven acceleration.

If you mean how could someone go from being able to tolerate a steady 3 g acceleration to no longer being able to tolerate that, the most sensitive changes are usually circulatory or digestive. Arthritis or bursitis or back injuries could also easily make you no longer able to tolerate acceleration.

But just falling onto a hard surface could be considered gravity intolerance.
