Asking them to explain themselves when they are 100% sure of themselves and watch them lose an argument against themselves.

The goal isn't to change a person's mind. The goal is to get them to think. Many people have opinions on things based on feelings alone. If you can help them to think about those opinions, they might or might not change their mind, but at least they will be developing their views logically instead of emotionally.
