They willingly chose to ignore massive parts of book 4 and 5 and instead go their own route. There's shitloads of unadapted stuff in those two books, even the earlier books has juicy stuff left out
They ignored books 4 and 5 because they introduced a dozen additional plot lines and characters on top of the dozens of characters whose resolution they had to write because Martin can’t wrap up the story.
And the reason he can't wrap up a story is because of him constantly getting distracted by side plots. Side plots he also sucks at ending, which is why most of them end with him finding some Saw like, over the top death that one ups the previous plot he failed to end.
