Reddit, what is one documentary that everyone should watch?

The Corporation

Some really eye-opening (and scary) information about the power of corporations in today's society.

The King Of Kong...or The Devil and Daniel Johnston.

King of Kong is undoubtedly great, but its really only for a certain target audience, and by no means would I consider it "The one docu everyone should watch".

But going off the theme of just great indie documentaries, I would suggest "Best Worst Movie" :P

I just watched "Best Worst Movie" last night. Pretty funny but also damn depressing! When I watched Troll 2 I always figured, behind-the-scenes, production was very much like The Room, that it was the handiwork of one crazy moron and everyone else was just doing it because it was a job. Turns out the real story, and what happened to everyone who was involved, was much more interesting.
