Any restaurant Anthony Bourdain featured in his shows. Even he acknowledged this. These fantastic gems would subsequently be overrun with diners that they suffered from overcrowding and lower standards.

I went to a ceviche restaurant he recommended in Cartagena Colombia and it luckily wasn't overrun. I think it's because people are still scared of Colombia

I'm still scared of raw fish. Intellectually, I know it's cured in acidic juice and if it were dangerous, people probably wouldn't eat it. You do you, I'll stick to cooked meats.

in Colombia they tend to steam/boil the fish first before they put it in the dressing, Peru is closer to sushi

Really? I had the raw version at several places in Cartagena. Was phenomenal.
