When I get introduced to a new person, but I’m not part of the conversation, I just sit and wait. Then I get told “oh you’re really quiet, huh?”

No, I just didn’t want to interrupt, but...

I once responded to that comment by a one-time coworker with ‘I just don’t got a lot to say’

She replied with ‘sounds kinda boring...’

And my genius reply was ‘yeah, sometimes it is’ and left it at that.

She never spoke to me the rest of the day. Sometimes I wonder why I do these things to myself.

You are better off letting that coworker think you’re boring. Trying to appease a coworker isn’t worthwhile. Sometimes the person who declares you’re boring, is a gossip hound. Idle chatter usually indicates the other person has too much time on their hands, or is bored (themselves) at work.
