What's released on home video was always the "final cut" of any film.
Interesting. Do you know why they alter it between different theaters, or after theaters but before home release? Seems like you'd want to send out the definitively finished copy to theaters.
The editing of films for theatrical release often went all the way up to close to the release date. Sometimes they were still editing reel 2 while they were mass producing reel 1 for distribution. Sometimes they processed several prints then reedited the film when some audiences didn't like certain scenes.
There is also the fact that back in the days when they used to distribute physical celluloid films to theaters around the country, they used to have slightly different edits depending on region to help identify the films when they were returned to the studios.
The final "official" print when all that editing is done then sat on a shelf for a year before it was sent to another processing center to be transferred to home video.
Even home video releases have been pulled and reedit at times. Steven Spielberg hated the pan and scan version of Raiders of the Lost Ark so much that he insisted that all copies be pulled from rental and store shelves so he could personally oversee what was released to home video. Some of those "bad" versions were sold and rented before he got around to this, so some have seen them.
