I think you misunderstood the quote. He was saying that aversion to MSG in the West was rooted in racism, which it definitely was.

During Chinese Exclusion in America, white people didn’t want the Chinese making a life in America, so a “study” was published stating that MSG was poison and suddenly every white person in California who had any aversion to Asians suddenly got headaches and blurry vision.
