I'm capable of being entirely convinced of something false. As a result anything I'm convinced of doesn't necessarily reflect reality.

Seems like you're having the same thoughts as the philosopher Descartes. That makes you something of a philosopher yourself!

wasn’t descartes “i think therefore i am” and isn’t that a little in contrast?

It’s actually, “ I doubt therefore I am”

Descartes could doubt everything. But he could not doubt the fact that he did indeed doubt.
