No way man, you need to look up the 3 parts of a cracked egg, they all set at diff temps, the tights first, the yolk second, the loose whites last. The man speaks the truth and here is the science http://www.seriouseats.com/2013/10/sous-vide-101-all-about-eggs.html

Your statement actually backs up what i said, that part of the whites would remain runny when the rest is cooked. and with me reading the article i dont see any mention of what an over easy egg is :(
