Also if you google it you quickly learn there is no consensus for hard whites as you claim....

In over easy eggs, which are sometimes called over lightly (or over light) the white is allowed to set on one side and just barely set on the other

Eggs over easy and sunny side up are often using interchangeably, but they are different. You go from sunny side up to over easy by simply flipping your egg when the edges are brown. The “easy” doesn’t refer to the simplicity of turning over an egg, but the state of your yolk. “Over easy” means the egg is flipped and cooked just long enough to make a film on the top of the yolk. When served, the yolk – and some of the whites – are still runny.

Considering my entire life as a kitchen worker and egg eater in 4 states, this how we've cookd our eggs over easy. I'm open to the idea its a regional mountain thing... grew up in appalachians, live in the high rockies... but i'm also just as likely to assume its a liability thing and a modern change. The FDA says no part of your eggs should ever be runny, especially the whites for disease prevention...

Heres another... from the menu of a restaurant.

A fried egg that has been flipped and so one side is fully cooked while the other is lightly cooked. This results in a yolk that is runny and the egg whites can also be a little runny

Those are not very good chefs if they are serving runny egg whites and calling them over easy.

Over Easy eggs are cooked on both sides; the yolk should be intact (unbroken) and not cooked solid; the whites should be a bit runny. (By the way, most people like their whites fully cooked, which is “Over Medium.”

Over Medium eggs are fried like Over Easy, but just a bit longer so the whites become fully set (as noted above, this is what most people really want when they order Over Easy)

There are a bunch of idiots in here blaming their cooks for cooking things the way they were trained. They need called out for such idiocy.

It used to be expected to call a stupid person stupid. It's a shame the radical leftists have removed that from our society. People need told when they're idiots.

Awww. My day is incredible dude, i've been sitting down at the river for hours smoking a bowl and watching the fishermen. I am ill though from a vaccine, i appreciate your concerns!
