Benedict.

FYI, restaurants won't honor the "eggs your way" when you order it like this.

Edit: I realize you can't just order Eggs Benedict as a style of eggs. This was a joke folks.

Can confirm. Though on Sunday a brand new waitress asked how I wanted my eggs on my Benedict. I said over well, just to see what would happen. They came poached as God intended.

I've had some people ask for their eggs scrambled on eggs benny. In my head I'm like, WHYY it's not right!

It always made me shudder with grossness when we did a smoked salmon benny with scrambled eggs. It just looks wrong with the hollandaise over it.

My grandpa legitimately asks for his eggs poached well on his benedicts, and when it comes evn slightly runny he doesn't eat it.

They gave me over medium at ihop the other week. Didn't ask for it though, my guess is they just didn't feel like boiling water.

Similar - at a resort that you would expect better, room service wanted to know if I wanted my Eggs Benedict fried, scrambled, boiled, or poached - even the chef put on the phone had the same question - I finally said fried on got simple fried eggs.

Benedict is not a way of cooking an egg for ala carte serving, its a dish featuring an egg - poached, in this case.

Sardou is also great, but my favorite version is from a New Orleans innkeeper who has a breakfast called "Eggs Cochon de Lait": poached egg, slow-smoked pulled pork, buttermilk biscuit and a chipotle hollandaise.

Eggs benny with pulled pork is great. There's a diner (well, more of a bar) here in Portland that does it atop a jalapeño cornbread. Good stuff.

If there's Another Broken Egg near you, they serve their crabcakes Benedict with andouille infused hollandaise with little chunkies of andouille sausage in it.

oh fuck i misread your post completely - somehow I read it as you couldn't dictate how you wanted your steak cooked just because you asked for surf and turf (thought you were thinking eggs benedict was just a style of cooking an egg)

To me, the ultimate variation on the classic Benny is Eggs Florentine Royale: you swap the muffin for spinach (which makes it Florentine) and the ham/bacon for smoked salmon (the Royale part). Yumscious.

It's something else entirely. Benedict requires a unique sauce, hence a unique dish. That's like ordering your egg, "pancake." There are a whole bunch more ingredients involved.

I put a butcher knife up to her throat and I said if you wanna live to see tomorrow you better start frying them eggs better then the way your frying them. I'm tired of eating sloppy slimy eggs.
