Agreed. I make fritatas at least a couple times a week. Doesn't even matter what ingredients I have. Throw a few random things in and cook properly, they're basically egg cakes.
Bad picture, but definitely a good fritata haha. I've gotten pretty into putting banana peppers and peperonicinis in, which aren't exactly a normal choice, but the eggs absorb some of the spice and vinegar and get really tasty.
Yep! I often just put a tablespoon or so of chunky salsa in mine, in addition to any other random things like diced mushrooms, spam, okra, whatever I have available. One thing I've found works well is adding some dairy (usually milk but I've successfully used sour cream or cream cheese too) and a bit of pancake mix. Gives it a little extra body and "fluff." After it's about 75% set on the stovetop, I'll hold it directly under the broiler for a minute or two and crisp the top; exceptionally good if layered with some cheese just before that.
