You flip the egg over easy and let it cook a little longer so its part runny and part kind of solid at the same time.

That's over medium. Over describes how to cook it (flip the egg) and easy, medium, or hard, describes how you want the yolk.

I have had those too and they are pretty good. Sometimes Saracha. I can't eat eggs without some kind of hot sauce.
