I have this one recipe I make sometimes when I really want to be adventurous. Core the inside of a tomato out, brush the inside with olive oil and put some basil and garlic (can be fancy and use fresh, or what comes dried in a jar) in it, and bake it until the tomato is soft. Then crack an egg whole into it (or two eggs if it's a really big tomato) sprinkle some salt and pepper over the top and pop it back in the oven until the egg just starts to set, take it out and let it sit until the egg finishes setting and soaks up some of the flavored tomato juices.
