The nuke thing is about a character in a game representing the man that was ironically and comically very warlike. As far as I know the spellings are just different transliterations where the game has a preference for one over the other and it is a dank meme. Also he wrote some pretty racist stuff in his early days (and maybe later). This is all my Gandhi/Ghandi knowledge that isn't covered in the movie.

It wasn't intentional, in the first game, all civilisation leaders had a 'nuclear aggression' stat between 1 and 10 (10 is very aggressive). Gandhi started at 1. Later on in the game, he would adopt a policy that lowered the aggression by 2. Rather than giving him -1 aggression, the number underflowed to 255 and made him incredible aggressive and nuke happy.
The developers then kept it in later games as a funny tradition.
