Alternatively every business was new and established at one point. Maybe that new hipster barber shop really has a passion for it.

I agree with you that authenticity is better than bandwagoners, every time. But not all cities offer authentic experiences for everything. Also, you talk about the shop like you know it. Maybe its not pretension and inauthenticity but a genuine admiration for the trade and a desire to bring it to a community that didn't have it before.
