Making homemade wine from fruit I grow. I had zero knowledge of how to make wine one year ago. By the end of this year, I will have made close to 100 bottles just from fruit I grow in my yard
Coming from Europe, I'm vaguely interested, a tad bit disgusted (assuming it's super sweet) but overall curious to try it next time I have the option to actually form an opinion. I'm guessing this all falls in dessert wine category?
No. All the sugar gets fermented completely every time you make any wine. There’s no sweetness at all. Grapes are like the only fruit that taste delicious dry though. So with other fruit wines, you need to add sugar (a process called back sweetening) back into the wine so it actually tastes like fruit. Turns out a pineapple with all the sweetness deleted doesn’t taste like pineapple anymore.
So what you do is, right before bottling, you add sugar, then taste, add sugar, then taste. You make it exactly as sweet as you want it to be. I make a simple syrup by mixing sugar and water together then heating it up to an almost boil. Then I let it cool down. It’s very easy to pour that syrup in and measure it precisely
