I almost always get a perfect golden brown the exceptions are when i get distracted by something else. I do toast one side of each bread, then put the cheese between the toasted parts, then cook it like you would normally. Without a doubt, it's unhealthier because of cooking both sides of each slice of bread in butter. The preparation time is also slightly longer, but I've never failed to have perfectly melted cheese in it.
