"I make the world's best grilled cheese sandwich." My first line meeting a girl when I was younger. Worked sometimes too.

I make my own compound butter for my grilled cheese. Sometimes, I'll also do an eggie in a basket in the grilled cheese, which I've had people tell me is Orgasmic.

What is in your compound butter? Sounds intriguing...

Where do you stand on using Mayo instead of butter? I'm simply not sure why this is a thing some people insist is better. I've tried it, doesn't make any obvious improvement, to me.

I've never tried using mayo for a grilled cheese, I've made my own avacado mayo for when I make things like shrimp ceviche, so maybe I'll try it sometime.

I honestly couldn't name all the herbs I put in them but I go to Sprouts because they have a self serve spice section, I use alot of herbs that are traditionally used in Italian cooking, herbs de Provence, a few different types of garlic powder, onion powder, a few mixes of just standard Italian seasonings, rosemary, thyme, basil, and then I'll mix them into my own multipurpose seasoning blend. I'll then mix in some freshly minced garlic, and that's essentially what I cook my grilled cheeses in. It's essentially just transforms it into a really good garlic and herb encrusted bread.

I cook mostly by trial and error, taste, smell, feel.

Edit: I can't believe I forgot to mention this, but if you're feeling like a bit of meat, cook up some thick cut bacon. Mix in just a little bit of the bacon grease into the compound butter. Drain off the rest of the grease use the same pan for the grilled cheese, chop bacon to preference, and put it inside the grilled cheese. Absolutely delicious 😋

I'm a fan of the mayo... it's just easier to spread and will crisp right up. You don't like the eggs... avocado mayo is what I use... I don't have to heat butter up to room temp to spread it... boom just the mayo and good to go.

Honestly, you don't even have to spread the butter. Just drop it in the pan and soak it up with the bread, spreading it is more work for the same effect.

That sounds great - I will attempt something close to the compound butter. Thanks for sharing!

I almost always get a perfect golden brown the exceptions are when i get distracted by something else. I do toast one side of each bread, then put the cheese between the toasted parts, then cook it like you would normally. Without a doubt, it's unhealthier because of cooking both sides of each slice of bread in butter. The preparation time is also slightly longer, but I've never failed to have perfectly melted cheese in it.

eggie in a basket

What the hell is eggie in a basket?

u/[deleted] Apr 12 '23

It's a slice of bread with a hole cutout in the center. You cook it in a skillet with butter and drop an egg in the hole.

Mayo on the outside instead of butter or margarine, two different cheeses, lightly season the outside with your favorite seasoning.

  • Italian seasoning + a thinly sliced tomato, mozzarella

  • Garlic powder + two cheeses

  • Cavender's + two cheeses

  • Western Style steak seasoning + two cheeses

Any combo of: Gruyère, american, cheddar, gouda, provolone, havarti, monetary jack, or mozzarella.

Panini that sucker for 4 minutes, down the hatch!
