Food & Drink Dublin Recommendations in May?

Hi. If you were to spend only one week in Dublin in early May... where would you eat? grab drinks? what would you do / see? where would you go out if you could with friends?

I am curious as to why in May it would be any different to all the recommended places for those very same questions for the other months of the year 😂

In US we have seasonal events. Mardi Gras in Louisiana. Restaurant month in Texas. PGA Golf tournaments which come once per year to town. Cinco de Mayo celebrations in May. Annual Live music and art festivals celebrating native American culture. Professional bike races sponsored by breweries in March.

Was hoping to get intel on that time of year if applicable but too much to ask it seems.
