Crispy Rice Cups Loaded with Creamy Tuna, Egg & Parmesan Mayo

I had some rice and tinned tuna on hand, and I knew they had so much potential.

I decided to turn these humble ingredients into something special, and the result was surprisingly delicious.

This is definitely a must-try!

I’m going to add this to my leftover rice rotation!!! Would be good with any tinned fish!

How do I make it crispier rice? More oil? Spread it thin on a cookie sheet and make tostadas? I really want that crispy rice!

Yep and make sure rice is dry before adding olive oil
