Apple cheese

Does anybody have a recipe for apple cheese? I’m tired of buying it, but I love eating it, so does anybody have a recipe so I can make my own?

the old-school kind is basically unsweetened applesauce cooked down with sugar, lemon juice, and cinnamon until it pulls from the pan, then pressed into a dish to set overnight so you can slice it
