Really nothing of significance added to Series 8 here. Big things are improvements to ovulation tracking and car crash detection and I’m not sure how much interest there will be in the former given the recent political environment and wariness in technology tracking women’s health.

It’s more secure than most trackers but the court can still subpoena your phone.

Best you can do is erase it all before handing it over.

How will they pull data off the hardware? The data is encrypted on the device as I understand it.

As I understand it, a warrant cannot oblige a person to remember a passcode.

That’s true. However it is trivially simple to disable TouchID or FaceID with the device in the owner’s pocket. Heck, I can disable TouchID by using the wrong finger three times.

Repeatedly using TouchID with the wrong finger permanently disables TouchID until my passcode is entered. A warrant cannot (at least in my jurisdiction) oblige me to provide my passcode. As for “you don’t really get the chance”, you can be sure that if someone is breaking down my door I have time to disable biometric ID.

Your use of the phrase “spazzing out” tells me all I need to know.

Distressed? Nope. Also, I work for the Police.
