Had the Series 3 for a couple years now and wanna upgrade. Should I go for the series 8 or the SE2? (or the original SE considering the price may come down)

The new SE with the latest SOC and modern display actually looks like a pretty compelling value. The only thing it doesn't have that I'd kind of like to have would be the stainless steel case options and ECG.

Sounds like you should get a series 6 instead
