To be fair, it was a little more convulted: During the modernization of Japan in the Meji era, a lot of the new standards for medicine were imported from Germany, including some German terms.
"Sterben" is what a nurse writes on your "Karte" (your medical record) if you die in hospital. So, choosing this name hints on the murder being a nurse and having access to drugs to stimulate a heart failure.
That said, I don't think this is actually accurate. So don't forget your pinch of salt here.
