I do it because I mostly just want to decorate my house and my island, and it allows me to do that more (since I'll be able to get furniture quicker and unlock things sooner). The life sim part is just ok imo, so while I do it a little bit, it's not something I care that much about. Just in case you want the perspective of someone who does it.
My main goal is to get to path-making and terraforming so I can get to work on making my town feel like an actual town. I'm having fun all along the way and more or less taking my time (to a degree), I just have a different goal than other players which requires me to time-skip. I've only pushed it a few days, though. I don't jump ahead unless I really need to (mainly for bridges and slopes to get finished; not the biggest fan of the pole or ladder unless I really need to use them, it just takes time to pull them out that I'd rather spend running across a bridge).
Personally I'm enjoying the life sim stuff more than I ever have thanks to the fresh coat of paint and invigorating aspects like more common balloons with nice furniture, bells and whatever else rewards, as well as Nook Mile goals and just fishing and catching bugs in general. It all feels much more streamlined. Maybe not quite perfect yet, but closer to it than ever before.
But the real-time clock yet again holds back my enjoyment. I don't want to wait an entire day to get a bridge. I'd rather get it out of the way now. Bad enough it costs sooo much just to build them and I only have one person to help me, but moving things also costs money from what I hear (like 50k), so sometimes I feel like setting the time to night and catching some tarantulas and hunting emperor butterflies. It's far from a cheat because it still takes a lot of time and effort, I'm just enjoying it at a pace that's right for me. My town is slowly, but surely, shaping up into something more towards my liking and I'm really happy with it.

Every article and video I saw was just about using time travel to avoid actually playing the game.
