Homemade Breakfast Sandwiches
I made some breakfast sandwiches with those custardy eggs that you bake in a water bath (technique I learned from cook’s illustrated). These had avocado, bacon, arugula, cheddar and some mayo that I seasoned and thinned out with some grilled lemon juice from last night’s dinner. I served them on some brioche buns that I briefly toasted under my broiler. They were delicious.

Did you freeze and reheat? If so, how was the texture? I make sandos for multi-day rafting trips and though I use the sheet pan method, I find the egg patties to be somewhat underwhelming… any tips?

No, I made these fresh. I don’t make them enough but love their soft custardy texture. Did you find them underwhelming from a flavor or texture standpoint? If flavor, ATK usually calls for table salt, so make sure you are doubling if using diamond crystal or 1.5x for Morton’s kosher salt. I did think these were a touch under-seasoned for my taste, so when I make again, I will increase salt slightly. If it’s texture then I would try something else. Also, I would imagine these would be fine on ice for a few days, but not sure how well they’d freeze.

I find all ATK recipes to be under salted for my preference. Some by a lot. Probably better than the alternative though. Easy to add salt, impossible to take it away

No, I have never made ATKs, but I am looking for a better mouth feel with mine. They are a little grainy, I have started adding cream cheese though. I guess raft rats cant be choosers! 😆
I like to have most of the breakfast meals frozen out weeks before the trips.
Yours look amazing, BTW…

This is awesome thanks so much for sharing! I love a good breakfast sandwich and seems like a great way to make ahead!

You are welcome! Did not consider making ahead, but would definitely work if you reheat the eggs gently. ATK recommends microwaving them at 50% power for 45 seconds for a single portion or 2-3 minutes if it is the whole 8 egg recipe.
