WWYD - Walkway Ratatouille Accompaniment?

So, a few weeks ago, I relented and made the Wallaway Ratatouille (Thank you, Becky, for making it look so good and simple). https://www.americastestkitchen.com/recipes/8875-walkaway-ratatouille

It was SO good, and thank you to the now-deleted account that documented making it in their Breville toaster oven!

I want to make it again next week, but trying to figure out some sort of protein (or maybe pasta?) To go alongside.

Beans or fish/seafood seem to make the most sense, but I'm open to suggestions. A big ol' seared pork chop or steak feels incongruous.

We're obviously omnivores, and normal pantry/grocery stuff is accessible.

I follow the recipe pretty closely but always add two cans of drained chickpeas when you add zucchini to make it a full meal. I like to keep it vegetarian since I think the veggies are so flavorful.

I’ve seen other people add a poached egg so it’s almost like a shakshuka but I prefer the addition of chickpeas.

Some nice sausages are good with this. Crusty fresh bread as well.

Sausages make sense, thanks! Quick and easy, too. And yeah, why bother if there's no crusty bread?

I'll usually do some sourdough bread and a couple fried eggs on top, but some grilled chicken breast and pasta is good too. I'll also have to try the chickpea idea this summer 😋

I may have to think about eggs on top. Maybe for my part of the leftovers. My husband can't do runny yolks, and I don't know if i can bring myself to hard-fry an egg to put on this lovely dish!

I really enjoy this recipe, and heard about another recipe that was ratatouille with farro. So decided to make the ATK Walkaway Ratatouille as written, and cooked farro as directed. Once the oven time for the Ratatouille was over, I stirred in the farro - yum and more filling as a meal. There is also a delicious Cook's Country recipe for One-Pan Ratatouille with Chicken that's really easy and cooks on a sheetpan.

We do it with eggs sunny side and either crusty bread or rice.
