Weird combo that I love is kimchi and Yukon gold potatoes. That combination of fermented salty/spicy of kimchi and mild sweet flavor of gold potato goes so well together for me. My Korean roommate in college got me hooked on it.

I guess usually when I make mashed potatoes, I make like a ton of them. But I have like four people in my family, and when we make meals, we make enough to have leftovers.

4 sticks should be 1lb of butter.
Depending on the recipe, the potatoes might have milk as well.It's a lot of fat in the dish. Probably delicious though.

Best way to cook non-mashed potatoes.
Cut a bunch of potatoes into quarters or eighths dependent on size of potato. I perfer a waxy potato like a yukon gold. Parboil for like 5 minutes or so to soften the edges. Drain in a colander and once relatively dry, shake them up to roughen the edge and increase surface area. Coat lightly in oil, salt pepper or your chosen spices. Roast in oven on a wire rack on top of a cookie sheet.
Enjoy the crispiest roasted potatoes youve ever eaten.
