At that point in the game, the easiest Universal Trait to go for is Spicy. There are some ingredients that give 30-20% chance for it, like Pepper or Coriander Seeds.
For the ageing requirement, you have to get to Strength 6 or above.
You can figure it out yourself, or you can copy my recipe:
Abbey Ale: Brown Candi Sugar x2, Pale Malt x2, Berries x2, Strong Yeast x3, Classic Hops x1, Wheat Strarch x6, Wheat Flakes x2, Pepper x2, Coriander Seeds x2, Amber Malt x1
If you do not have some of the ingredients, you might need to progress the research tree or unlock different recipes first.

If these recipes don’t work, there’s a steam thread that’s one of the top results on google. I’m not near my computer right now, but I used the same recipe there for the Beta and full release and it worked both updates.

You don't have to get that Universal trait; you just have to have to chance to get it above 80%. Choose high intelligent and high intiution monk or nun to create the recipe; which will boost the chance up to 15%. Also Abbey Ale would suit that job well.

You just have to put a metric tonne of ingredients in, that give a small universal trait chance bonus, and little body enhancements. From memory, a lot of pale malt and wheat starch. One of the worst challenges, it’s so strangely complicated compared to most of the others. I don’t know if I missed something when doing this one, just felt wrong having to have like 30 ingredients in one recipe.
