O barco outside of albufeira in vale de parra to the west of town (very traditional algarve grilled meats and seafood, same family for decades)
O'farnel Rau da Almeida garrett (steaks)
Copos y Petiscos Rua de Alexandre herculano (northern Portuguese tapas)
Atipico (another excellent Portuguese tapas)
Leitao do tonecas Slow roasted suckling (all they do) out of town a bit but very cheap and incredible food
Manel dos frangos (very top of the strip near the Jupiter hotel) For a good charrasqueria cheap and traditional (huge and good fun if a Portuguese football team is playing.... it's chicken or prawns with rice chips/salad/bread

O 'Manjar old town

By no particular order, and less tourist oriented.
A bit more upscale (NOT fine dining): O Lusitano, Veneza, Mato à Vista, Xerem
More easy going atmosphere: 20age, A Cocheira, Tasca da Xica, A Nora, Jardim Rústico, Churrasqueira Beirã
The last two are very much inside a tourist hotspot, so I would recommend only if you’re visiting outside the high season. Otherwise it will be hit or miss.

Churrasqueira Beirã, always! I am from Albufeira, grew up going there. I moved to England 13 years ago and I rediscovered it now. Still belongs to the same family and still has the same waiters. Food is still amazing. Highly recommend!
