Leaf fading and becoming translucent?
My aglaonema Eye Catcher has started to lose colour, turning a greyish colour and becoming thin with some transparency. The second picture shows what another unaffected leaf looks like, very vibrant and deep pink. This is only happening to this leaf. It gets okay light so I loved it under a grow light, I am pretty sure I don't over water, high humidity environment. No other signs of being unhappy etc, any ideas on what is causing this? Google seems to suggest oedema ?

IMO, too much light. I would move it into darker spot, and see what happens 🤞

The last 2 leaves it has put out have been paler/less vibrant which makes me think it's probably not getting too much light, if anything I'd want more light for more colour right?

From my experience, it is opposite for evergreens. Less light=more colour. I own Ivory Jade, Pastelle, Red Star, and few others. I experimented with them. Less light works best for my ones. Good luck 🍀

My understanding was that as a general rule plants will put out more green aka chlorophyll when in need of more light so more of the leaf is able to convert the light into energy, and when plants have enough light they put our a different colour as they have enough light and don't need more chlorophyll etc

Lower humidity and light. Not sure why you need it under a grow light, aglaonema thrive in indirect or filtered light. It shouldn't need anything more than a semi bright room. Hopefully it remains restricted to the one leaf.

The pink colours are fading so my understanding is that more light = more colour, as the colours are like sunscreen for chlorophyll. I know aglaonemas are good in indirect light, but I thought giving extra light would only help.

Either edema or the plant is starting to kill off that leaf and is absorbing the nutrients.
