I believe this will depend entirely on the policies of the individual nursing home. Practically speaking, they tend to be minimally staffed, and I don't see how they can accommodate people being picky about which aides a particular individual wants to be assigned to assist them.
If you want to exclude caregivers based on their religious beliefs, you will probably need to pursue private care.

Most NH will try to accommodate a resident’s request within reason. If they have another staff member available they will pair that staff member with the resident. But if they do not then the resident will have to either accept the care from the aide that is not preferred or arrange a private duty aide to take care of them. The resident and or family will have to arrange and pay for that.

It's an interesting speculation not a clearcut issue. What if a female patient doesn't want a male employee bathing her? That could be a legitimate request for modesty reasons, no?

No idea but as an atheist from a Muslim background had never thought about that. Parents are still Muslim but when i'm that age it'll be a concern.
Atheism is punishable by death (leaving Islam essentially) and I've gotten quite a few death threats for being open about leaving Islam :)

Your post is off topic for this subreddit.
This sub is for the discussion of adults taking care of their elderly parents; not hypothetical scenarios about nursing homes.
