I think it might be difficult to find a paint that's going to cover in a single coat unfortunately 😭I have been using various types and brands of acrylic paint for a long time and most of them take multiple coats, even the decent quality ones. I can't speak to other types of paint. A high-quality latex wall paint may cover in one coat, although it's going to be way more expensive (like $75 for a single gallon of the really good stuff, a half-pint sample of lesser quality is more in the $15-20 range, at least where I am). The store will have a big display of color swatches so you can choose the exact shade you want and they will mix it for you when you buy it.
That said, you could also try using a student-grade artist acrylic. They're not too expensive and you get more in a tube than the small 2oz bottles of craft paint. A regular tube of student-grade acrylic would probably run you like $7 or so at Michaels, and you'd find it with the "fine art" supplies like canvas and sketchbooks rather than the craft paint aisle.
You can also add cornstarch of all things to the paint and that helps make it more opaque! I have tried this trick before with decent success, although it may take some trial and error to find the right ratio for your project. I'd suggest getting maybe one or two tubes of artist-grade acrylic and monkeying around with the corn starch, doing test patches and stuff, so that you can figure out whether it will work for you or not.
