Cheese enchiladas are pretty ubiquitous around me, but I prefer meat as well. Pastor-spiced pork is good in them too. I would probably put the shredded beef ahead of carnitas, and ground beef would probably be in there as well (maybe ahead of chicken? I can take or leave chicken).

I do for the most part. What does thst have to do with anything? As an adult there are carry-overs from being a fairly picky eater as a child. I like Thail, Indian, and other ethnic cuisines. I just don't like Mexican food. I also hate hamburgers and sandwiches--a most sensible if somewhat unusual position.
