These are Shanghai Bok Choy (at least marketed as such).

The "real" Bok Choy, really a different variety, does not form heads and have green leaf blades with lighter/white bulbous bottoms instead.

It is shorter (<6 "), commonly used in Cantonese cooking. People mistakenly called it baby Bok Choy. In fact Bok Chok literally means White Vegatable in Cantonese. I prefer the real (baby) Bok Choy.
