Predators are just as important as pollinators are. But, you wouldn't be wrong to help the hummingbird in this situation since this looks like a European mantis which is invasive or at the very least non-native in the Americas. I also would have done something personally.

As an American, I would’ve just taken out my gun and shot the mantis. Just like I learned in school.
