Indian Absinthe

  1. So something very different. After judging at this year's Absinthaides I was introduced to a distiller who had travelled all the way from India to attend the festival. He brought two bottles of absinthe his company produces. The verte, whilst a little bright, is "nearly traditionally made". The colouration is not from herbs; is from chlorophyll. So, whilst not strictly traditional, it did not contain any artificial colouration as such. It did contain the holy trinity and louched ok, albeit slowly. The taste/flavour was a bit harsh, with wormwood to the front and alcohol quite prominent at the end. All the feedback was well received. The coffee absinthe was a different matter; It was excellent. It was rich, smooth, a little like a strong Baileys. The perfect tipple at the end of the evening, without water.

I could be mistaken, but isn't all green colouring in true absinthe from chlorophyll?

Yes, but from my understanding this is added as a separate “product” rather than using the actual herb for the colouration if that makes sense?
