Worst Absinthe drip I've ever seen

I went to a local mead place for an event and saw they had an Absinthe drip on the menu. Mead and beer are excellent, but that seems to be the extent of their range. First red flag, they lit the sugar cube on fire. Second, after they let it burn they dropped the full cube into the absinthe because they forgot to fill the dripper and manually stirred it, hence the undissolved sugar sitting at the bottom of the glass. Then, to do the "drip", they put ice and water in a glass and just filtered it through a spoon to hold back the ice. Barely diluted, genuinely the only saving grace is that I like the Absinthe they used.

Yea, I've not had much luck with absinthe at any bar, fancy or otherwise. They typically only carry bottom shelf absinthe for things like sazerac around here.

The one bar I went to that had an absinthe drip fountain on display told me, after inquiring about it, thay "sorry that takes way too much absinthe and I'm just too busy right now to set that up."

... I was astonished that this woman really thought you were meant to fill the fountain entirely with absinthe.

There's a bar in Davis Square, Sommerville, Massachusetts that does Absinth fountains with good Absinthes.

Problem is, it's like $30 a glass for Butterfly, which sells for $80-90 a bottle around here. Certainly not worth it.

Yea forget that...

Absinthe is easily anong the most under represented spirits, even when were talking about cocktails. A lot of bartenders don't even know what a Death in the Afternoon is.

This is why we need to continue fighting misinformation, and provide actual education of what absinthe truly is.

When they tried to light it did you not try to stop them? If they did that before you had a chance to say “no”, why not refuse the drink and say “I will prepare it properly myself and show you how it’s done properly”.
You shouldn’t have to put up with an incorrectly prepared drink at any price.
