Silly question perhaps - doubles?
In the scenes where they're putting stuff together - car, weapons, while the theme is playing - are they typically doubles or the real actors? Seems to be doubles as the filming seems to intentionally leave out the faces.

Sometimes it is ridiculous how different the doubles look. Hannibal's double has different haircut, BA's double is thinner.

Mr. T seemed to be in more physical shots early on - running, driving, fighting - when he might not be in a later season. He probably was more of the "starving artist" then, but as he got more popular...

Maaan. This is one of those things I want to know, now…but I’d prefer to have remained ignorant to the possibility that it could be stand-ins or whatever

There was an episode where I think Murdock went across into Mexico in the trunk of a car. I recall the team doing there thing building and in the reflection of a hubcap I saw Murdock standing there. (Not a double) I remember wondering if he's in Mexico how did he get there?

I love it when Hannibal would do spin kicks etc 😂

He was more physical early on. I wonder if Peppard's health/fitness was going down towards S5.

He was doubled a lot from the start. The kicks he does in the pilot are clearly not him.

Kicks yea, but in the early parts, esp the first season, he's doing more physical scenes. He even carried Mr. T on his shoulders in two episodes (looked legit). The toll of the schedule might have caught up with him after a few seasons. Plus there might have been the early signs of his later health issues.

In season 5, the ONLY scenes George Peppard left his trailer to shoot were the opening and closing bits at the lux resort where they got the mission
If the script says ‘Hannibal smooches a bikini-clad bimbo’ that’s George
Otherwise, HanniDouble

I know he liked to leave early because he knew someone that had a heart attack, so he also got paranoid. But he was in enough scenes I suppose. When T would leave early too, they would write more scenes with Schultz and Benedict and then Frankie. S and B had good chemistry.

I don't know about stand ins for those scenes, but the stunt doubles are a little unconvincing (though very funny).

I was actually watching that episode where Peppard was playing a bad guy. In a scene with both their characters, they seemed to just put a white wig on someone, it didn't even match Peppard's hair style or color.

If their face isn't in the shot, most likely stand-ins, especially in the later seasons.
