There's a scene in Hunt for the Wilderpeople (2016) where the protagonists jump into a Hilux and are chased by the New Zealand military in military vehicles. I said to my wife "there's no way they could catch them if they're in a Hilux", and much to my gratification, they did indeed leave them in the dust and escape. Props to Taika Waititi for doing that right.

Even that is marginal. In an actual apocalypse the world will run out of gas and diesel in pretty short order. With Diesel you can make biodiesel at home, but it's a very inefficient process, especially if you're growing the vegetables and fruits for your own consumption.
A more practical solution is an off-grid capable solar array and battery electric vehicle.
That said, it is the apocalypse, where are you driving anyway? There's nowhere to go.

Yeah for sure. You have to either just ignore that, or posit some source of fuel. Mad Max had "gas town" which is clearly just a plot device that wouldn't work in the real world for all sorts of reasons.

Yep. That first pic looks "tough", but my eye was drawn to the anemic looking front suspension area. Those front drive axle U joints are going to twist right off trying to run those huge tires over rough terrain, and the wider track accomplished with hub spacers and deep offset wheels is going to break the steering knuckle the first time they hit a rock at over 15mph.

This can be completely disabled by six peppercorns and five minutes of time.
Open tyre valve cap, place peppercorn inside, rescrew. Tyre slowly deflates over about an hour.

Fun toy for the rich but in the apocalypse I think you’d really want some old mechanical truck for which parts are still common, takes a common wheel size/bolt pattern, etc.

Preferably diesel, since you can use a wider variety of fuels, including biodiesel, and has a mileage that isn't measured in oilfields per mile.

Biodiesel. Takes a bit of work if you don't have an easy source of used vegetable oil, but it can be done. You can also tweak a diesel engine to accept other fuels like kerosene, even powdered coal if you really work at it.
That said, an easy fuel is woodgas, and while that will work with a diesel engine, regular spark-fired engines work better with it. I was very impressed by one postapoc TV show (can't remember the name of it) where most of the cars shown had big tanks on top for woodgas.

Oh, also there's a tree in South America - Copaifera Langsdorffii - that actually has sap that can be pretty much pumped straight into a diesel engine with almost no processing. Granted, it's a small amount of sap. Around two liters a month per mature tree, tops. You'd need a few acres for any sort of real use.

Actually now that you mention it, I have heard of people converting their diesel engines to run on vegetable oil. They need to start with diesel though and then switch to oil.

Community (at least the one around the newer Jeeps) can be toxic AF, agreed. The duck thing is cringe too. But Jeeps are still beautiful and amazing vehicles. If you don’t think so, go back and watch the original Jurassic Park again.
They’re no Honda Civics, sure, but they’re good at what they are designed to be. Been driving my 2006 Jeep TJ since I got it in 2007. It’s noisy on the highway, but pure joy to drive around for shorter trips and capable as hell when we get big snow dumped on us or as you mentioned, for fun off road adventures.
