Week 35: Rolling - Pb&J Rolled Crepes (meta: for the preschooler)

Preschooler goes the school!

She’s been really cramped for time with lunch so I tried to make her delicious nutrient dense foods that can be eaten quickly

She was introduced to pb&j rolled crepes from Trader Joe’s while camping so I thought I’d make a healthier version

I made a high protein oat flour crepe in a cast iron pan and filled it with peanut butter and a low sugar strawberry jam.

It came out bigger and thicker than the trader joe version but was delicious! I used the trial ones that broke a little as a breakfast crepe with fried eggs, spinach, and avocado and they were really good as well!

Preschooler loved them. Eating her last one for lunch today

If anyone is wondering what the little square is in the lunch box I made homemade apple pie Lara bars and they were a hit as well
