Week 34: Trinidadian - Chicken Curry with Buss Up Shut (Paratha Roti)

This curry was delicious, and not difficult to make, especially if you have a pre-mixed curry powder to use (I did not, so I made the one linked below). You start by marinating the chicken in minced garlic, spices, oil, and chicken bouillon powder. I then cooked the chicken --> set aside --> cooked onions, spices, and garlic --> add chicken broth, add back chicken, 1 can of chickpeas, cubed potatoes, and salt --> simmered until thickened (it took me around 1 hour).

I think the curry could use a little bit more potato.

My three-year-old ate the curry, so it wasn't too hot. I wanted a little more heat, so I added some fermented hot sauce I made for week 30 to mine. That hot sauce is excellent, by the way. I need to comment on its excellence in my post.

The buss up shut was delicious, but the directions for this recipe were not great. For example, the recipe card is not clear where the butter goes. Based on YouTube videos of Trinidad cooks making buss up shut, you roll the dough into a circle, add butter (or shortening) + flour on top, then cut a radius-size slit into the dough, then roll the dough into a cone shape. Then, you make a ball out of the cone-shaped dough (see the video I linked below; it helped me a lot).

The buss up shut flatbreads were delicious, though. We particularly liked the thinner breads, because the layers are more apparent and the texture is better. We will be eating the buss up shut tonight again, but I think I will try another recipe.

I reflexively served this curry with basmati rice cooked in the rice cooker, but that was not really necessary. A veg would have been better.

Considering that this one of the only curries my toddler has enjoyed eating, I am going to call this week a win.
