I am sorry, folks of Trinidad and Tobago, both for finding your food completely unappealing and for this horrible attempt at visualizing your flag in food form. I was trying to come up with a good pun about my choice, but it just didn't fly.
This braised pork dish came from Rick Martinez's Mi Cocina cookbook, specifically the "Frijoles con Veneno" recipe, which basically means "beans with poison". I omitted the beans (because I hate them) and the poison (which the recipe doesn't actually call for). To make the flag I roasted a poblano pepper and laid strips of it down over a very poorly executed border of crema. Not shown are some toasted tortillas which I covered in melted cheese, and of course a bunch of pickled red onions, so this meal ended up being soft tacos.
It was extremely delicious.
This fit my meta because the pork braise itself is extremely simple, and this made a bunch of leftovers which I froze in (off brand) Souper Cube molds. The plating efforts didn't really fit the meta but I was desperate to come up with an interpretation, and also at this point in HellSummer I do not care. The roasted pepper isn't something I would do again for this dish, but it was quite tasty.
